Cabbage Rolls

Cabbage rolls are a little time consuming, but they are sooo worth it!
I try to make a double batch and freeze half so next time they are an easy meal.
Try to find a fairly large cabbage as you want the leaves to be a good size.
I was a little disappointed this week as the cabbages were not as large as I would have liked...
But they will do...


Was going to post a photo of the cooked cabbage rolls , but they didn't last long enough.

Cabbage Rolls

1 cabbage

1 lb lean ground beef
4-5 cups cooked rice
2 cloves garlic minced
1 large onion chopped
Salt and pepper to taste

Sauce
********
3 tins tomatoe soup
1/3 cup brown sugar


Bake covered at 350 for 2 - 2 1/2 hours

Brown beef


Add onions and garlic


Season with salt and pepper


Mix with cooked rice


Meanwhile, bring a pot of water to boil and submerge cabbage. Cut of leaves as they become tender.


Form cabbage rolls .



In bottom of oven proof pan put some of the sauce 




Lay cabbage rolls in pan.


Cover with sauce and bake covered at 350*F for 2 - 2 1/2 hours

Tattertot Casserole

I know, I know.....
Tatertots aren't exactly the healthiest of foods.
But I am feeling a bit lazy and don't want to make mashed potatoes......so .....tatertots it will be.
( actually picked up the wrong bag and got mini hash brown rounds....they will work just fine too)



This casserole is very easy and really very very good.
 

Tatertot Casserole 
------------------------
2 lbs ground beef
1 onion chopped
1 clove garlic minced
2 tbsp Worcester sauce
3 cups frozen mixed vegetables
2 tins cream of mushroom soup
Pepper to taste
2 cups grated cheese
1 bag of tatertots 

Bake at 350*F for 45 minutes

Brown beef


Add onion and continue to cook until onions are transparent.


Add minced garlic to beef and onion 


Add frozen vegetables and cook for 5 minutes.


Add Worcester sauce and mushroom soup and bring to a boil.


Add pepper to taste.


Put into a oven proof 9x13 pan that has been sprayed with cooking spray.


Top with cheese..


Put tatertots on top and put in oven at 350*F for 45 minutes


Serve with a nice salad for a delicious meal....
