Apple Muffins

So as I was pouring myself a coffee this morning I noticed my fruit bowl was almost empty except 3 rather awful looking apples. It is definitely time to buy more fruit!


Now I could just throw them out....right?
Wrong...
There is still a lot of the Apple that is good. 
Good excuse to make muffins


Apple muffins with a streusel topping 
--------------------------------------------

1 1/2 cup flour
1/2 cup sugar (white)
2 1/2 tsp baking powder
1/4 tsp salt 
1 egg
1/4 cup milk
1/4 cup oil
1 cup diced or shredded Apple ( you can peel it or not. I don't usually bother)

Topping
---------
1/4 cup butter ( or margarine)
1/4 cup flour
1/2 cup brown sugar ( packed)


Heat oven to 400*F
Coat 12 muffin tins with cooking spray.

In a bowl mix the first four ingredients.
Make a well in the centre
Set bowl aside
 
In another bowl mix the next three ingredients. 
Add the Apple

Pour the wet ingredients into the well of the dry ingredients.
Stir just until the mixture is moistened.

Fill muffin tins 3/4 full ( don't overfill or your oven will be a mess)

Make topping
 Simply mix the butter , flour and brown sugar together. I use my fingers as it is easier.
When it is crumbly, simply sprinkle on to of muffin mix in tins.

Bake for 18-22 minutes
