Bacon Soda Cracker Candy

So here is a recipe that's really easy and sooooooo good.
Everyone loves bacon.....right?
Well this turns your favorite breakfast food into a candy delight!
The saltiness of the bacon and the sweetness of the brown sugar is to die for!!
So when bacon goes on sale, buy an extra pound and give this recipe a try.
You won't be disappointed.

Bacon Soda Cracker Candy
----------------------------------
1 1/2 packages of soda crackers ( the ones you use for soup)
  * not boxes, but the sleeves inside the boxes
1 1/4 cups of butter
1 1/4 cups of light coloured brown sugar
1 lb of bacon

Heat oven to 400*F
Take a cookie sheet with sides and cover with parchment paper or foil.
I use foil and spray it with cooking spray so it doesn't stick.
Chop the bacon into bits and cook until crispy.
Drain it on paper towels and pat it to get as much of the grease off as possible.
Set the bacon aside.
Layer your cookie sheet with a single layer of soda crackers.
Set the pan aside .
In a saucepan put the butter and sugar and heat until the butter is melted and the mixture comes to a boil.
This is VERY hot so please be careful. Burns are not funny!
Stir mixture and continue boiling for 3 minutes.
After 3 minutes of boiling , pour the mixture ( CAREFULLY, it's hot remember) over the soda crackers.
Place in the oven for 5 minutes.
Remove from the oven and sprinkle the bacon over top.
When completely cool, break into pieces.

You are going to love the caramel flavour of the brown sugar against the saltiness of the bacon.

I can't wait for bacon to go on sale again!!!
