Every day, day in, day out. We as parents have a family to feed, and when you are trying to watch your pennies, it can be a struggle to come up with new ideas that don't break the bank.
Today was one of those days when I woke up and thought " OMG....... What do I make today?.."
So...after a couple of cups of coffee to give me the kick start I needed, I opened the fridge to take stock of what I have and what needs to be used up.
Well...lets see....
Last night we had spaghetti with a meat sauce and there is a cup or so of the sauce leftover.....
A couple of days ago my hubby made a salad with dinner and there is a third of a can of olives left...
A rather sad looking couple of cloves of garlic
And a third of an onion from four or five days ago
I still have a green pepper from when they were on sale at the grocery store. 2/$1
Hmmmmmm.......sounds like...........
PIZZA !!!
Yep....add some grated cheese ( purchased on 1/2 price , grated and frozen ) and we have supper!!
So an hour or so before I want to make dinner I make the dough. This really only takes just a few minutes.
Pizza Dough

1/2 to 3/4 cup or so of fairly warm water
1 tbsp or 1 package of yeast ( I like fast action yeast)
1 tsp white sugar
2 cups of flour
1tbsp oil
1/4 tsp salt
Bake at 425F for 15-20 minutes
This makes enough for 1 pizza. Double for 2 pizzas
Mix 1/4 cup of warm water , yeast and sugar until yeast is dissolved.
Set aside for about 5 minutes or so. Mixture will get bubbly.
Meanwhile combine flour, oil and salt in a large bowl.
After the yeast has doubled and is all bubbly add it to the flour mixture.
Mix together and add enough of the extra warm water to make a nice dough that doesn't stick to your hands or the bowl. Add a bit more flour if you have to.
Now put a bit of oil in the bowl and roll the dough to cover in oil.
Now cover with plastic wrap and a clean tea towel and let rise in a warm place.
I like in the oven with just the light on as this supplies just the right warmth.
Now to get the air out...just give it a gentle mix
Ok .... Now put it on a oiled pan. A cookie sheet works just as well.
