Cheese

Did you know you can freeze cheese..?
Yep, solid,grated,cream,ricotta.... You name it, you can freeze it.
Often when I go to the grocery store there is cheese marked down in price due to the best before date drawing near.
I can save at least 50% by buying cheese that goes on sale.
Cream cheese, ricotta, feta and grated cheese can be frozen as is or in serving size containers. Let's face it , a block of feta will do 2 or 3 Greek salads and you may only need 1/2 a tub of ricotta for that recipe you like to make. I find cream cheese comes in good size containers so I don't bother repackaging it.
The only thing you might have to do is give cream cheese a stir before you use it.
Grated cheese works great for casseroles, taco topping , or anything you would normally use it for.
Blocks of cheese can be frozen, but I like to grate it for my recipes first. Freeze it on cookie sheets and then put it on a freezer bag or container for when you need it. We use cheese for homemade pizza the most, but also use it for soups, stews, chilli, tacos,potatoes,sauces..........and much more.
